    Recent advances in artificial intelligence (AI) have led to the development of high-tech sensors known as electronic noses, which can detect and report specific smells with improved speed and accuracy. Sensifi, an Israeli company, has developed e-noses that contain electrodes coated with nanoparticles of carbon to detect smells or volatile organic compounds (VOC) given off by bacteria. The unique VOC fingerprint of different strains of bacteria creates a distinct electric signal in the Sensifi machine, which is then recorded and checked against an ever-growing database by an AI software system. This innovation allows food producers to use e-noses on site, providing results in less than one hour and significantly improving food safety. Other companies, such as NTT Data Business Solutions, are also developing e-noses to detect contagions and assess the freshness of food products, aiming to revolutionize the food industry’s production, storage, and distribution processes. While some AI experts express skepticism about the widespread adoption of e-noses due to cost and implementation challenges, entrepreneurs in New Zealand are exploring biotechnology to develop biosensors that are thousands of times more sensitive than a dog’s nose, with potential applications in food safety, disease diagnosis, sustainable farming, and environmental monitoring.
